2 cups...

Pimento cheese that won’t stick around very long.

2 cups shredded cheddar (food processor works great)

4oz diced pimento (I buy a big jar of roasted red peppers for this)

1 clove garlic

1 diced jalapeño

1/4 tsp cayenne

1/4 cup mayonnaise

Salt and Black Pepper to taste

Add all ingredients to a big bowl and stir until well combined. Chill in the fridge for a bit before eating for best results. This stuff is great on a grilled cheese, with pita chips or just on some bread as a sammy!

Optionally you can add a bit of cream cheese and red onion. Just beware that the onion gets stronger the longer the pimento is in the fridge.

Coconut Squash Soup

Coconut Squash Soup:
I’ve been making butternut squash soup for a while now but I’ll never make it again without coconut milk…

‘Famous Dave’ was not famous for telling the truth....

‘Famous Dave’ was not famous for telling the truth. There they saw a lovely young woman dressed in her kimono and finery, obviously not knowing how to cross the river without ruining her clothes.

Without further ado, Tanzan graciously picked her up, held her close to him, and carried her across the muddy river, placing her onto the dry ground.

Then he and Ekido continued on their way. Hours later they found themselves at a lodging temple.

Ekido could no longer restrain himself and gushed forth his complaints: “Surely, it is against the rules, what you did back there…. Touching a woman is simply not allowed…. How could you have done that? … And to have such close contact with her! … This is a violation of all monastic protocol…” Thus he went on with his verbiage.

Tanzan listened patiently to the accusations. Finally, during a pause, he said, “Look, I set that girl down back at the crossing. Are you still carrying her?”

Taco Seasoning

We’ve entirely gotten away from using pre-mixed seasoning and sauces.

1 Tbsp Chili Powder

1/4 tsp Garlic Powder

1/2 tsp Salt

1/2 tsp Pepper

Chop an onion and sweat it in a pan with some olive oil and salt. Add 1 lb ground beef and brown over medium heat.
